How to Identify Flour Quality

Flour quality can be divided into three types in China, flour produced by different flour machines has different quality grade. Below we have a detailed introduction of how to identify the flour quality.

 

1. Color
flour produced by flour machinePut the thin layer samples of flour on the black paper, and then compare with the appropriate color or standard sample, closely observe the color differences.

● Good quality flour--- white or light yellow color, pure color.
● Low quality flour--- color and lustre of flour is dim.
● Bad quality flour--- It’s grey or dark yellow color.

 

2. Texture
Again put the thin layer samples of flour on the black paper, check whether there is the moldy, agglomerate, insect and impurities, and then try the feel of flour.

● Good quality flour--- It’s fine powder and contains no impurities, smooth to the touch, no bugs and agglomeration.
● Low quality flour--- It has coarse grain to the touch, with insect or impurities.
● Bad quality flour--- It’s high moisture content, mildew and agglomerate.

 

3. Smell
Take a small amount of flour samples put in the hand, smell it, or put flour samples in a bottle, add 60 ℃ hot water and plug tightly for a minute, then pour out the water for smell.

● Good quality flour--- no peculiar smell
● Low quality flour--- It smells a little bad.
● Bad quality flour--- It is bad odor, acidity, kerosene and other peculiar smell.
